Bison on technicality, but yes cow elk, it's like the perfect medium, not as dry as venison, but gamier than beef or even bison. Gamier being a good thing to me. Duck is up there too.

Deer meat is about as wild as I get. I also like alligator.

Can't eat duck. I've tried it a few ways, and it's just too greasy for me.

I've never had elk, but have tried bison. Bison is pretty good.

The game meat that is given to you gratis!

I like deer, very rich. I have had elk and it just did not wow me. I have had bison and I would change to bison in a New York minute except it is a bit to expensive for me.

The duck that you have tried, store bought or field shot? I would just breast the ducks I shot and not worry with the rest. It was very lean and quite tasty. The ducks that I shot in North Dakota were not big enough to mess with the entire bird, breast meat was good enough.

Duck meat varies widely based upon their diet. Here in Washington we have local ducks and migratory ducks. Local ducks taste like crap because they have a local diet. Migratory ducks taste much better because they feed off of crops like corn as they migrate. Kind of like grain fed beef tasting better than other beef.
